I was looking for a zucchini bread recipe when I came across this one. What a find!
These are meant to be a side dish, but I decided as they bubbled in the skillet that they were going to be the main attraction instead.
I had just 1 medium zucchini, so made a half recipe, and it was perfect. Instead of the small pancakes, I made 3 large ones, using 4 tbsp. flour and frying them for 5 minutes per side. Also, I combined the pepper, salt, and baking powder with the flour to ensure more even distribution before adding them to the grated zucchini and onion.
These were heaven, and only took 20 minutes from start to finish. I will definitely make them again!
