- tostada shells (store-bought, or homemade recipe below)
- vegan sour cream (store-bought, or homemade recipe below)
- guacamole (recipe below)
- chopped tomatoes
- salsa (choice)
- shredded iceberg lettuce
- cilantro leaves
- 2/3 cup green lentils (or brown lentils)
- 8 oz. mushrooms (stems removed very roughly chopped)
- 1/2 medium yellow onion (a small-, very roughly chopped, ~75g once chopped)
- 1/4 cup walnuts (toasted)
- 1 Tbsp. flaxseed meal
- 3 Tbsp. nutritional yeast
- 1 tsp. kosher salt (plus more to taste)
- black pepper (to taste)
- 1 tsp. smoked paprika
- 3 Tbsp. taco seasoning (start with 2 tablespoons)
- 1/2 tsp. mushroom powder (porcini, add more as desired, optional but adds a concentrated pack of umami)
- 2 tsp. seasoning (vegan beef broth, optional but really makes this taco meat taste like beef)
- olive oil (for cooking)
- 112 grams plain yogurt (vegan unsweetened, I used this one)
- 120 grams salsa (choice)
- 2 Tbsp. water
- 1 tsp. ground cumin
- 1/2 tsp. chili powder
- 1/2 tsp. smoked paprika
- 1 tsp. kosher salt
- 2 Tbsp. nutritional yeast
- 2 Tbsp. pickled jalapeños (optional)
- 2 Tbsp. brine (optional)
- 10 1/2 Tbsp. freshly squeezed lemon juice
- 1/2 tsp. white vinegar
- 112 grams coconut yogurt (I used this one)
- 1/4 tsp. sea salt (plus more to taste)
- 1/2 tsp. garlic powder
- 4 Tbsp. water (more as needed)
- 3 ripe avocados
- 1 lime juiced (large juicy)
- 1 jalapeño (diced, or add a pinch or two of cayenne pepper)
- 2 garlic cloves (crushed)
- 1/4 cup fresh cilantro (chopped)
- kosher salt (or sea salt to taste)
