- shredded cheese (you can use any kind…I buy pre-shredded cheddar cheese to save time)
- 1 Tbsp. olive oil (divided)
- 4 portobello mushrooms (medium-sized)
- 2 chicken breasts (or 2 cups leftover cooked chicken)
- 1/2 red pepper (diced)
- 1/2 red onion (diced)
- 1 egg
- 1/4 cup breadcrumbs
- 2 cloves garlic (minced)
- 1/2 tsp. salt (each, & pepper)
- 1/4 cup fresh parsley (chopped)
- 1 cup shredded cheddar cheese (divided)

Delicious. I actually had all the ingredients on hand. I air fried using Portobello mushrooms, red and yellow peppers. I had to season my chicken all little more. It ain't season if you're not sneezing!!
