- turkey carcass (Leftover)
- 4 qt. water (1 Gallon)
- 2 celery ribs (cut into large chunks, celery leaves included)
- 2 carrots (cut into large chunks)
- 1 bay leaf
- 1 onion (cut into fourths)
- 1 sprig fresh parsley
- 1 sprig fresh rosemary (optional, not necessary if you do not have it lying around.)
- 2 leaves fresh sage (optional, not necessary)
- 2 cloves garlic
- 4 qt. homemade turkey stock (recipe above)
- 3 Tbsp. olive oil
- 1 yellow onion (chopped)
- 4 stalks celery (chopped coarsely)
- 3 carrots (chopped coarsely)
- 4 kale leaves (large green, stems removed then chopped coarsely)
- 1 cup frozen peas
- 1 cup mushrooms (sliced bella)
- 1 box fusilli pasta (or bag of)
