- 1 Tbsp. light brown sugar (or palm)
- 1 Tbsp. fish sauce
- 1 Tbsp. lime juice
- 1 Tbsp. finely minced shallot
- 1 Tbsp. scallions (finely minced)
- 1 Tbsp. cilantro (finely minced)
- 1 Tbsp. toasted rice powder
- 2 tsp. chili powder (Thai toasted, phrik phon)
- 1 tsp. white peppercorns
- 1 tsp. black peppercorns
- 1 tsp. coriander seeds
- 1 stalk lemongrass (fresh, bottom 3 to 5 inches only, tough outer leaves removed and discarded, tender core thinly sliced)
- 6 cloves garlic (peeled)
- 1/4 cup cilantro stems (roughly chopped)
- 3 Tbsp. light brown sugar (or palm)
- 2 Tbsp. fish sauce
- 1 Tbsp. light soy sauce
- 1 tsp. dark soy sauce
- 3 lb. chicken wings
