- 6 garlic cloves
- 1 piece ginger (peeled)
- 2 lemongrass (1 inch pieces, each sliced in half lengthwise)
- 1 Tbsp. extra virgin olive oil
- 2 tsp. shrimp paste (or anchovy paste OR mushroom sauce*)
- 1 1/2 tsp. curry powder
- 1 tsp. ground coriander
- 1 tsp. ground turmeric
- 1/2 tsp. ground cumin
- 1/2 tsp. ground white pepper
- 1 pinch canela
- 12 dried Thai chiles (birds eye chiles, seeded and soaked in warm water for 30 minutes)
