I used yellow curry paste ordered from Amazon, coconut milk (because my store didn't have creme), added thin-sliced carrots, skipped the fish sauce, and spooned this over cauliflower rice. Excellent! It's very similar to my favorite local Thai restaurant's yellow curry dish, which I love!

I like this recipe alot. The taste is great. I do add carrots and pumpkin (when pumpkinis in season). With those additions this is awesome yellow curry. Pretty comparable to eating out at a thai restaurant.

This was easy and super delicious! I didn't use as much potatoes as the recipe called for, but flavors were still delicious. Will definitely make again with some zucchini and cauliflower.

Family favorite! I made the curry paste along with the Thai Yellow Chicken Curry with Potatoes for my husband and I and brought the leftovers (frozen) with me for a weekend with my family. Everyone asked for the recipe! I couldn't find thai peppers at our local grocery store, and substituted them for dried Mexican peppers. Tasted great over jasmine rice!
