- 2 red chillies (I use fresno chilies, roughly chopped)
- 2 tsp. lemongrass (paste)
- 3 tsp. fish sauce
- 2 tsp. sugar
- 3/4 tsp. salt
- 3/4 tsp. cumin
- 6 spring onions (/scallions roughly chopped)
- 2 kaffir lime leaves (dried or fresh)
- 2 cloves garlic (peeled)
- 3 cms ginger (piece, peeled and roughly chopped)
- 4 salmon fillets (skin removed)
- 1 coriander (packed cup of, /cilantro leaves)
- 4 Tbsp. vegetable oil
- 4 brioche rolls (toasted)
- 1 cup salad leaves (mixed)
- 2 carrots (peeled, use a vegetable peeler to make the strips)
- 1/2 cucumber (use a vegetable peeler to make the strips)
- 1/2 red onion (peeled and sliced)
- 4 Tbsp. sweet chilli sauce
