- 1 head Boston lettuce (washed, dried, and torn into bite-size pieces)
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh cilantro
- 1 red bell pepper (finely chopped)
- 1 cucumber (peeled, seeded, and finely chopped)
- 1/2 red onion (finely chopped)
- 15 oz. baby corn (whole, drained, chopped, and patted dry)
- 11 oz. mandarin oranges (drained and patted dry)
- 8 oz. water chestnuts (chopped, drained and patted dry)
- 1/2 cup dry roasted peanuts (finely chopped)
- 1/4 cup toasted sesame oil (unrefined, such as Napa Valley Naturals Organic Unrefined Sesame Oil, Note: if the sesame oil does not specifically say it is unrefined then you can assume it is a less-healthy refined oil)
- 2 tsp. rice wine vinegar
- 1 Tbsp. raw honey
- 2 Tbsp. tahini
- 1 Tbsp. soy sauce (unpasteurized, such as Nama Shoyu, Note: Unpasteurized soy sauce, such as Nama Shoyu, is distinctly different than the typical soy sauce you purchase at a regular grocery because it is loaded with good-for-you probiotics and enzymes)
- 1 lime
- 1/4 tsp. crushed red pepper
