- 1 lb. carrots
- 2 large sweet potatoes (medium-, about 1 ½ pounds total)
- 1 apple (large)
- 1 medium onion
- 1 piece fresh ginger (thinly sliced, or 2 tablespoons Ginger Paste)
- 1 Tbsp. lemongrass (finely chopped fresh, or Lemongrass Paste)
- 4 medium garlic cloves (peeled)
- 2 tsp. brown sugar
- 1 tsp. ground coriander
- 1 tsp. curry (mild powder)
- 1/2 tsp. cumin
- 1/2 tsp. chili garlic sauce (or Sriracha sauce)
- 5 cups low sodium chicken broth (you may need a bit more later, for thinning)
- 2 tsp. fish sauce
- 2 Tbsp. Greek yogurt
- 1 Tbsp. milk
