- 2 tsp. curry powder
- 2 Tbsp. vegetable oil
- 14 oz. unsweetened coconut milk (2 cans)
- 2 cups low sodium chicken broth
- 1 1/2 lb. duck legs (about 4 or duck breasts, substitute chicken if desired)
- 1 Tbsp. fish sauce (or more to taste)
- 1 Tbsp. soy sauce (or more to taste)
- 1/2 Tbsp. light brown sugar (or to taste)
- 1 cup pineapple chunks (from about 1/4 fresh pineapple)
- 1 cup cherry tomatoes (halved)
- 1 red bell pepper (seeded and thinly sliced)

- 1/4 red onion (thinly sliced)
- 1 handful fresh basil leaves (small handful, roughly chopped)

I have made this several times. I’ve used chicken in place of duck sometimes and it is just as amazing. Although a bit time consuming, it is totally worth the added prep to make the paste. This dish is incredible. My bf asks for me to make this regularly. 👍😊
