- 2 Tbsp. red curry paste
- 2 tsp. ground turmeric
- 1 1/2 cups whole peeled tomatoes
- 15 oz. juice
- 1 can coconut cream (Trader Joe's, for richest flavor)
- kosher salt
- 1 lb. mixed vegetables (cut into 1" pieces, I used green beans, yellow cauliflower and carrots)
- 1 lb. white fish (firm, halibut or cod; skin removed and cut into 2" pieces)
- 1 pkg. rice noodles (cooked)
- cilantro sprigs (optional)
- lemon wedges (optional)
