Fab! Did not have fresh basil so used a pinch of dried. Used grilled chicken leftover. Will make again

did a couple of adjustments but was absolutely delicious! I added chicken necks to give it a little more flavor and some star anise :) it was very forgiving to improvise with what I had available.

Very good! Didn't have a red pepper on hand, but added carrots and potatoes and an extra can of coconut milk. I also used chicken thighs instead of precooked chicken. So creamy and delicious! I may try using a cup of cream and the coconut milk next time.

This is so flavorful!!! My friend and I devoured it. I divided the recipe in 2 so it would only be 2 servings. I deleted the red bell pepper (i find bell peppers to be overpowering ) I was all out of fresh basil. I added potatoes, and peas. I also added an extra 8oz of chicken broth. I used raw chicken, cut it into chunks and let it cook in the soup, with the potatoes. I garnished with scallions and cilantro. One big bowl was dinner. i used low fat coconut milk. I am on Weight Watchers, and for the Beyond the Scale program it was 7 points. It was 6 for freestyle. I can't say enough good things about this. i could eat it twice or 3x a week !!
