- 11 oz. black eyed peas (fresh shelled, or the equivalent of frozen or canned)
- 1 grilled chicken breast (cut into small, bite-sized pieces)
- 1 cup chicken broth (unsalted, and ½-1 more in case it dries up)
- 1 cup reduced fat coconut milk (substitute water or soy milk if you have cardiovascular disease as coconut milk is high in saturated fat. ½ cup more coconut milk in case it's too spicy.)
- 1/8 tsp. black pepper
- 1 Tbsp. low sodium soy sauce
- 2 Tbsp. red curry paste (or 3 if you like it a bit spicier)
- 2 Tbsp. green onions (chopped, optional)
