- 6 garlic cloves
- 1 Tbsp. paprika (adjust to your spice level)
- 2 kaffir lime leaves (OR bay leaves)
- salt (to taste)

- 1 red bell pepper
- 2 zucchini (small or 1 big-)
- 2 broccoli (crowns -)
- 400 mL coconut milk (1 can)
- 2 cups chicken stock
- 6 Tbsp. lemongrass (Minced fresh, OR store bought prepared lemongrass)
- 1 Tbsp. corn starch
- 1 Tbsp. fish sauce
- 1 tsp. shrimp paste
- 1 Tbsp. brown sugar
- 1 tsp. galangal (root powder or use fresh if available)
- 3/4 tsp. ground cumin
- 3/4 tsp. coriander powder
- 1/4 tsp. cinnamon (powder)
- salt
- fresh basil
- 1 Tbsp. fresh lime juice

really strong flavors! i think the lemongrass added a lot to this dish. didn’t have all of the ingredients but it was still amazing.

yep really good a lot of prep but i will try to make it with curry paste next time n see how that turns out
