- 1 carrot (peeled and grated)
- 1 English cucumber (seeded and diced)
- 2 scallions (white and green parts, finely sliced)
- 1/4 cup chopped cilantro (freshly)
- 2 Tbsp. mint (fresh chopped, or basil, optional)
- 1/4 cup lime juice (freshly squeezed, from 3-4 limes)
- 2 1/2 tsp. asian fish sauce
- 1 1/2 Tbsp. vegetable oil
- 2 Tbsp. sugar
- 1/4 tsp. crushed red pepper flakes (use less if you don't like heat)

Good - I'd definitely recommend doubling the sauce - it needs WAY more flavor, but the base is good. I hate carrots - would sub gobo root. And, the oil isn't necessary...

Delicious and fresh with just the right tart/sweet ratio. I will be adding this to my regular summer menu rotation. I didn’t have any fresh mint or cilantro in my garden yet so I used dried mint and gourmet garden cilantro in a tube (adjusting the amounts) and still was delicious! Can’t wait to try it again with my own fresh herbs.

Delicious. Once Upon a Chef recipes never disappoint. I make this weekly. Great to have in the fridge for a quick snack.

Delicious light salad was a huge hit with everyone at our BBQ. Went heavy on fresh herbs and let it sit for several hours to let flavors blend before serving
