- 1/4 lb. shrimps (fresh, blanched, peeled, tails removed large, about 8 pieces)
- 1 whole pomelo (fresh ripe, peeled, sliced, pulp bits loosened, about 2 cups, or use fresh grapefruit)
- 4 cups lettuce (fresh, washed and shredded into bite-sized pieces)
- 1 whole cucumber (peeled, sliced)
- 2 cups cherry tomatoes
- 1 whole green bell pepper (or red, seeded and sliced r)
- 1/2 cup coconut meat (grated, fresh or frozen)
- 1/2 cup chopped peanuts
- 2 stalks scallions (sliced, for garnish, optional)
- 4 stalks fresh cilantro (chopped, for garnish, optional)
