- 2 cups cooked rice (long grain, preferably refrigerated overnight)
- 1 pineapple (small, diced and set aside or 1 can of pineapple cubes)
- 100 grams boneless chicken (Cut into small cubes and seasoned with ½ teaspoon of fish sauce.)
- 10 prawns (Peeled & deveined and seasoned with ½ teaspoon of fish sauce. You may also season with some turmeric powder. [Optional])
- 2 Tbsp. cooking oil
- 30 grams butter
- 3 shallots (peeled and minced)
- 3 garlic cloves (peeled and minced)
- 1 tsp. shrimp paste
- 2 Tbsp. roasted cashew nuts
- 1/4 tsp. pepper (powder)
- 2 Tbsp. raisins (dried, optional)
- pork (or chicken floss, optional)
- coriander (for garnishing, optional)
- 1 tsp. turmeric powder
- 1/2 Tbsp. coriander powder
- 1 Tbsp. pineapple juice
- 2 Tbsp. fish sauce
