- 1/2 onion (medium, diced)
- 1 red bell pepper (diced)

- 1/2 cup pineapple (diced, I prefer fresh)
- 3 Tbsp. hoisin sauce (quality, Lee Kum Kee or Kikkoman)
- 2 Tbsp. low sodium soy sauce
- 1 Tbsp. rice vinegar
- 1 Tbsp. brown sugar (more or less depending on how sweet pineapple is)
- 1 Tbsp. red curry paste
- 1 tsp. ginger (scant, freshly grated, 1/4 teaspoon ground)
- 5 garlic cloves (3-, minced)
- 1/2 tsp. basil (dry)
- 1/2 tsp. salt (plus more to taste)
- 1/4 tsp. pepper
- 1 1/2 tsp. cornstarch
- 1/3 cup water
- chili garlic paste (Asian, /sauce like Sambal Oelek, we like a lot)
- 4 Tbsp. smooth peanut butter (3-)
- fresh pineapple (plenty of, chopped)
- peanuts (crushed)
- green onion (chopped)
