- 2 Tbsp. tamari (or Liquid Aminos)
- 1 Tbsp. white sesame seeds (each - toasted black sesame seeds, toasted)
- rice noodles (Gluten free)
- 1 Tbsp. avocado oil
- 1 white onion (roughly chopped)
- 1/4 cup Thai chilis (dried)
- 1 jalapeno (roughly chopped)
- 6 cloves garlic (roughly chopped)
- 2 Tbsp. fresh ginger (peeled and roughly chopped)
- 1 oz. dried shiitake mushrooms (dehydrated/)
- 6 cups low sodium vegetable broth (seperated)
- 13.5 oz. full fat coconut milk (cans)
- 1 Tbsp. lemongrass (paste, if you can find fresh, that is preferred)
- 1 large carrot (peeled and julienned)
- 8 oz. fresh shiitake mushrooms (sliced)
- 1 1/2 cups frozen corn
- 1 cup snap peas (sliced)
- 1 lime (large, about 2 TBS)
