- 1/2 Tbsp. roasted red chili paste
- 1 Tbsp. fish sauce (plus more for serving)
- 1/2 tsp. granulated sugar
- 1 Tbsp. neutral oil (grapeseed or other)
- 1 shallot (large, thinly sliced)
- 4 large garlic cloves (minced)
- 1 cup bok choy leaves (chopped baby, roughly 2 heads)
- 2 Tbsp. lime juice (freshly squeezed, plus several wedges for serving)
- 3 scallions (green parts only, thinly sliced)
- 1 handful cilantro leaves (fresh , roughly chopped)
- 1 handful fresh basil leaves (torn, Thai is best, but Italian will work in a pinch)
- 1 handful fresh mint leaves ( torn)
- 1/3 cup dry roasted peanuts (chopped)
- 1 Tbsp. roasted red chili paste
- 1 tsp. neutral oil (grapeseed or other, plus more for cooking)
- 4 salmon fillets (wild Alaskan sockeye, roughly 4-5 ounces each, skin-on)
