- 2 Tbsp. fresh ginger (finely chopped, you'll need a thick 2-inch piece)
- 3 cloves garlic (minced)
- 2 lb. ground chicken (not all breast meat)
- 1 1/2 Tbsp. soy sauce (use gluten-free if needed)
- 3 Tbsp. fish sauce (see note*)
- 1/4 cup dark brown sugar (or light)
- 2 tsp. lime zest (from 2 limes)
- 3 Tbsp. lime juice (freshly squeezed, from 1-1/2 limes)
- 1/2 tsp. red pepper flakes
- 2 scallions (large, white and green parts, finely sliced)
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup cashews (chopped, or peanuts)

my family loved this. I couldn't find any fresh mint so I used dried mint. i also chopped up chicken through instead of ground chicken. Very Flavorful! Will definitely make again.

I made this once, and followed the directions exactly. While it is a good recipe, its not as delicious as the other recipes I have tried from this site.

Packed full of flavour! A great summer meal. Quite salty so might try less fish sauce next time.

This is a really tasty recipe with really zingy flavours. The kids love loading the lettuce leaves up. The cashews give it a nice crunch too.
