This came out really good. Much better than I thought. I’ll be making this one again.

I skip the topping and just add that amount into the main coconut milk and sugar mixture. Used a mixture of lite and full fat coconut milk and a combo of sugar and monkfruit sugar. Needs more sweetness, so I add honey and use more sugar. Let everything cool and then just stirred the rice into the pan where I made the sauce. Served with mango chunks once cooled (dish works warm or chilled). Followed the rice prep instructions, but made it in my rice cooker: https://www.thespruceeats.com/make-sticky-rice-in-rice-cooker-3217199. Which it’s just 3 c. water, a little salt, and the amount of rice (after the soak) this recipe calls for. Dump it all in and simply turn the rice cooker on to do it’s thing until done!

Best sticky rice we’ve ever had. Better than what we get in our favorite restaurant. Will definitely make again.
