  • 1/4 cup peanut oil
  • 1 pound lamb (lean, cut into thin strips)
  • 1 clove garlic (minced)
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 Thai chili (seeded, finely sliced)
  • 3 tablespoons fresh mint leaves (torn)
  • steamed rice (to serve)

    Directions

    1. Heat oil in a wok over high heat. Stir-fry lamb for 2 mins, until almost browned. Add garlic, oyster sauce, fish sauce, sugar and chili. Stir-fry for 2 mins, until lamb is cooked to your liking. Fold in mint.
    2. Serve with steamed rice.
