- 2 cloves garlic (peeled)
- 2 chiles (medium to 4, spicy Thai, bird’s eye, stemmed, and chopped more or less depending on how hot you like it)
- 1 pinch coarse sea salt
- 1 Tbsp. unsalted peanuts (dry roasted, plus extra for garnish)
- 1 cup green beans (or snake beans, cut into 1 1/2 -inch pieces)
- 12 cherry tomatoes (halved, quartered if large)
- 3 cups kohlrabi (peeled and julienned, from 2 large or 3 small)
- 2 Tbsp. lime juice
- 2 Tbsp. fish sauce (more or less to taste)
- 2 Tbsp. tamarind water (more or less to taste; optional, if you omit, add extra lime juice)
- 1 Tbsp. sugar (palm, coconut, more or less to taste)

- 1 wedge cabbage (for serving, optional)
- lime wedges (for serving)
- fish sauce (extra, with chopped Thai chiles for serving)
