Directions

1. Combine peanut butter, 1 lime, 1 1/2 cup coconut milk, 1/4 cup soy sauce, 4 garlic cloves, and 2 chili peppers, 2 tablespoons fresh cilantro, and 2 pounds of cubed pork tenderloin in a medium size bowl, then add pork and let marinate under refrigeration for 4 hours.
2. Heat oil in a small saucepan, add the onion, 2 garlic cloves and 1 chili pepper. Sauté for about 4 minutes. Remove from heat. Stir in 1/4 cup soy sauce, 1 1/2 cup coconut milk, juice from one lime and 1/4 cup cilantro.
3. Preheat your grill or grill pan.
4. Remove the pork from the marinade and thread onto skewers. Grill for 8 minutes or until cooked through to 145 degrees F internal temperature, let rest for 3 minutes.
5. Serve with sauce.
