- 5 cilantro leaves (good sized sprigs of, stems and even roots if you have them)

- 1 Tbsp. fish sauce
- 1 Tbsp. sugar
- 1/2 tsp. ground black pepper (white is more authentic if you have it)
- 1 1/2 Tbsp. Thai red curry paste
- 2 Tbsp. vegetable oil (neutral)
- 3 Tbsp. chili paste (sambal oelek)
- 2 cloves garlic (minced)
- 1/2 cup rice wine vinegar
- 2/3 cup white sugar
- 2/3 cup water
- 1 tsp. salt
- 4 tsp. cornstarch
- 1 handful chopped cilantro
