  • 1 shallot
  • 4 tablespoons purple onion
  • 5 cloves garlic
  • 1 galangal (thumb-size piece of, OR ginger, thinly sliced)
  • 1/2 cup fresh coriander (chopped, /cilantro leaves & stems)
  • 1/2 cup fresh basil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground white pepper (available in most supermarket spice aisles)
  • 1/2 teaspoon ground coriander
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1/4 teaspoon salt
  • 1 teaspoon shrimp paste
  • 1 tablespoon sauce
  • 2 teaspoons brown sugar (to taste)
