Description
Spicy, herby green curry paste, mixed with coconut milk, delivers a sauce that’s quick to make but deliciously complex, with a tasty balance of heat, creaminess, and sweetness. Brands of Thai curry paste differ in spiciness, so you may need to experiment with a little more or less paste to find the amount that works for you. For extra spiciness, try adding thinly sliced fresh chilies as a garnish — Fresno chilies or jalapeños for medium heat, or bird’s eye, cayenne, or serrano for a big kick. Ingredients
- 14 oz. extra-firm tofu (or 16 oz.)
- 1 lb. baby bok choy
- 8 oz. fresh shiitake mushrooms
- fresh ginger (1 small piece)
- 2 cloves garlic
- 1 bunch Thai basil (or regular basil, small, about 1/2 oz. leaves)
- 2 fresh chilies (small, medium or hot, red or green, such as Fresno, jalapeño, birds-eye, cayenne, or serrano; optional)
- 2 limes
- 10 oz. rice noodles (or 12 oz., about 1/4 inch wide)
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. grapeseed oil (or other vegetable oil)
- 4 Tbsp. thai green curry paste (or 5 Tbsp., if you like more heat)
- 13.5 oz. coconut milk (1 can, preferably regular, not light)
Directions
- Bring a pot of water to a boil for noodles. Meanwhile, continue with the recipe.
- Rinse and drain tofu. Cut into 1-inch cubes. Use clean kitchen towels to carefully blot out excess water without breaking the cubes. The more you dry the cubes, the better they will brown in the pan.
- Trim ends from bok choy and separate leaves, leaving them whole. Remove stems from mushrooms and save for another use. Slice caps 1/4 inch wide. Peel ginger and grate it until you have 1 tsp. Mince garlic. Set vegetables and aromatics aside.
