- 1/4 cup curry paste (Thai, green curry paste, ***recipe in notes)
- 1 lb. chicken (2 boneless chicken breast, small diced)
- 1 inch ginger (minced)
- 1 bouillon cube (**check notes)
- 1 1/2 cups vegetables (I used broccoli, and red bell pepper)
- 1 tsp. garlic (fresh 2 cloves, minced)
- 2 green onion (thin sliced, yellow and green divided)
- 1 1/2 Tbsp. cooking oil (such a olive oil, or canola oil etc.)
- 1 cup chicken stock (**low sodium stock)
- 2 tsp. fish sauce
- 1/3 cup peanuts (roasted)
- 2 lime (cut into wedges)
- cilantro (fresh leaves)

Super easy to make and delicious. I used a combo of yellow onions, broccoli, bell peppers, carrots and mushrooms. I didn’t have bouillon, so I skipped it and just used broth. I had precooked chicken which I chopped up and added at the same time as the fish sauce. It was nice and spicy. The lime juice and peanuts make the whole thing sing. The only noodles I had was spaghetti - which worked and was delicious (I made the pasta separately). Would definitely make again, very versatile.
