- 1 Tbsp. peanut oil
- 1 onion (medium)
- 1 inch peeled fresh ginger (piece of)
- 4 cloves garlic
- 2 lb. boneless skinless chicken breast (thinly sliced)
- 1 red bell pepper (medium, seeded and thinly sliced)
- 1 cup bamboo shoots
- 1 cup broccoli florets (chopped into bite sized tops)
- 2 cups chicken stock (I use a nice and rich homemade stock)
- 3 1/3 cups coconut milk
- 8 thai basil leaves (roll the leaves up together then cut into strips, you can use regular basil if that's what you have)
- 3 Tbsp. thai green curry paste (I LOVE Aroy-D brand!)
- 3 Tbsp. brown sugar
- 1 Tbsp. reduced sodium soy sauce
- 1 lime (juiced)
- 2 Tbsp. fish sauce

Turned out well and the family really liked it. 4 stars is a good rating in our opinion with a 5 being for those recipes that just blow you away. About the only comment was that it would be nice if the sauce part was a little thicker. Would definitely recommend!

I couldn't find green curry paste so I used regular curry powder and it was still the best curry I ever made. I added more broccoli and bamboo shoots and added a lot of red pepper, cayenne pepper, and chili powder. Will make again and again!

Wow, just believe every word she says about the glorious flavors.
I served it without the rice, like a soup, and it was fabulous. I'm going to try mushrooms, and shrimp for a change of pace. It should be easily adaptable.
