- prawns (Handful raw, /shrimp, shells removed or only tails left on)
- 1/4 cup purple onion (finely chopped)
- 4 cloves garlic (finely chopped)
- 1 green chili (or red, thinly sliced, or 1/4 to 3/4 teaspoon dried crushed chili, chili flakes)
- 1/4 cup chicken stock
- 1 egg
- 1/2 cup frozen peas
- 1/4 cup currants (or raisins)
- 1/2 cup roasted unsalted cashews
- 3 spring onions (finely sliced)
- 1 1/2 cups red pepper (or chopped green, optional)
- 3 Tbsp. fish sauce
- 1 Tbsp. soy sauce
- 2 tsp. curry powder (Thai, or regular curry powder)

I'm really sorry to say this but it was utterly horrible. Perhaps it was the curry I used, but we found the fish sauce to be overpowering and the recipe underwhelming. We couldn't even finish it and had to make something else for dinner.

I've made this twice now. Turned out great both times. I add more curry powder towards the end to get the same color that they do in restaurants.
