Outstanding. Family loved it. Recipe lends itself to using a variety of vegetables.

Awesome.
I used olive oil vs coconut still perfect. My fav veggies are peppers, green beans, parboiled potato ( just one ) and a few fresh carrots. I served with rice but may skip that next time and offer nice crunchy bread instead. Don’t forget to add some salt and pepper to taste
