  • 1 cup coconut cream
  • 1 tablespoon Thai red curry paste
  • 1 yellow pepper (cut into strips)
  • 1 head broccoli (cut into florets)
  • 1 1/3 pounds white fish fillets (cut into 1 inch cubes)
  • 1 teaspoon fish sauce
  • steamed rice (to serve)
  • lemon wedges (to serve)

    Directions

    1. Combine the coconut cream, curry paste and 1/2 cup water in a saucepan over high heat. Bring to a boil. Add the pepper and cook for 2 mins.
    2. Add broccoli and fish and simmer, covered, over low heat for 4 mins or until the vegetables are tender and the fish is cooked.
    3. Stir in the fish sauce and season to taste. Serve with steamed rice and lemon or lime wedges.
