- 1 eggplant (medium, Cut into wedges)
- 3 portobello mushrooms (extra large, Sliced)
- 1/2 brown onion (large, Sliced Thai style)
- 1/2 handful thai basil leaves (Fresh, about 1/4 cup loosely packed)
- 1 kaffir lime leaf (medium Fresh, Finely sliced)
- 2 lemon grass (5cm, 2", Sticks Bruised to let out flavour)
- 1 tsp. red curry paste (Vegan of course!)
- 1/2 Tbsp. lemon juice
- 1 Tbsp. soy sauce (or Braggs Aminos, / Tamari)
- 1 cup vegetable stock (or water with salt.)
- 2 tsp. coconut sugar
- 1/2 cup coconut milk
- 2 cups salad leaves (Mesclun Mixed)
- 1 avocado (large, Chopped into chunks)
- 1 bunch coriander leaves (Cilantro leaves, chopped)
- 1 whole lemon juiced
