- 1/2 red bell pepper (large, seeded and sliced)
- 1/2 orange bell pepper (large, seeded and sliced)
- 1/2 yellow onion (medium, sliced)
- 3 garlic cloves (minced)
- 1 1/2 tsp. ginger (freshly grated)
- 4 Tbsp. red curry paste
- 1 cup snow peas
- 2 cans coconut milk (14-ounce each)
- 2 cups baby spinach (I like to remove the stems, but you can leave them on)
- 8 oz. rice noodles (cooked according to directions on package)
- 3 Tbsp. fresh cilantro (chopped, + additional for garnish, optional)
- 2 scallions (sliced)
- 1 pinch red pepper flakes (optional)

So easy to prepare
I left half the peppers for the last two minutes. I’ll definitely make it again. Even without a protein .
