  • 4 tablespoons red curry paste (+/-, we used Thai Kitchen Red Curry Paste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried minced onion (flake)
  • 1 1/2 teaspoons sea salt (+/- to taste *)
  • 1/4 teaspoon cracked black pepper (freshly)
  • 1 sweet potato (medium, peeled and cut into small cubes)
  • 15 ounces cannellini beans (drained and rinsed)
  • 14 ounces lite coconut milk
  • 1 teaspoon lime juice (optional *)
  • 1 carrot (cut into long, very thin strips)
  • 4 cups baby spinach (based upon desired amount)
  • 1 dash crushed red pepper flake (on individual servings)
