- 2 Tbsp. extra virgin coconut oil
- 6 garlic cloves (minced)
- 3 onions (med-large, chopped)
- 1/2 cup yellow curry paste (*, less with more curry powder if you have heat tolerance issues)
- 1 tsp. mild curry powder
- 3 bunches mushrooms (beech, chopped)
- 2 lb. ground beef
- 2 zucchini (medium, seeds scraped out and cut into half-moons)
- 2 bell peppers (sweet, seeded and thinly sliced)
- 6 cups beef stock (good, preferably homemade, definitely low sodium)
- 19 oz. coconut milk (canned thick, Mae Ploy* is recommended and comes in that size)
- 4 Tbsp. fish sauce (* to taste)
- 1/4 cup brown sugar
- 1 cup thai basil leaves (packed)
- 18 oz. soba (chūka, *, ramen noodles--if you have to, just buy the instant noodles and discard the seasoning, cooked according to package directions in salted boiling water)
