- 1/4 cup creamy peanut butter
- 2 Tbsp. rice vinegar (unseasoned)
- 2 Tbsp. fresh lime juice (from one lime)
- 3 Tbsp. vegetable oil
- 1 Tbsp. soy sauce (use gluten-free if needed)
- 2 Tbsp. honey
- 2 1/2 Tbsp. sugar
- 2 garlic cloves (roughly chopped)
- 1 inch fresh ginger (square piece, peeled and roughly chopped)
- 1 tsp. salt
- 1/4 tsp. crushed red pepper flakes
- 2 Tbsp. cilantro leaves (fresh)
- 4 cups napa cabbage (chopped, or shredded coleslaw mix, I like to toss in a little shredded red cabbage for color)
- 1 cup shredded carrots (prepared)
- 1 red bell pepper (thinly sliced into bite-sized pieces)
- 1 English cucumber (small, halved lengthwise, seeded and thinly sliced)
- 1 cup edamame (cooked and shelled)
- 2 scallions (medium, thinly sliced)
- 1/2 cup chopped fresh cilantro (loosely packed)

I have made multiple times I the last few weeks! I love this! Great side with multiple proteins - pork, chicken and salmon!

It was great! I used half the added sugar, 1/3 cup of peanut butter, and twice the red chili flakes. Packed a little extra heat that way, good topped with peanuts.

The salad was amazing! It turned out so good… All the boys and their parents from the volleyball team were just absolutely drooling for this recipe The first time I made it. Now I make it all the time for potlucks and everybody loves it. I have two additions… first of all I add in some chopped up chicken to make it like more of a main dish. Second,I put chopped dry roasted peanuts over the top for even more crunch. Honey roasted is good too!

This was really good, except for one thing. The dressing was way to vinegar-y! I cut the vinegar by half and then it was good.

Incredible! Since I discovered this recipe, i make it twice a week. Everyone that has tried it has asked for the recipe. I do not add the sugar and use half the honey for the dressing. Most of my fav recipes come from Once Upon A Chef!

The peanut sauce recipe is awesome - tastes like something out of a Thai restaurant! I used fresh peas in their pod instead of edamame and it turned out great. I will def make this recipe again!

Love this salad! Twice made now, next time I'll leave the cilantro out of the dressing so it'll last longer in the fridge. There is plenty of cilantro in the salad itself so it's not missed. A keeper!

Spot on dressing! Instead of canola and red pepper flake, I used sesame and chili oil WOW! A paper copy of this is going in my book, NOW!

This is a delicious salad, and we just added chicken. Even my 13 year old who rarely eats veggies said, this is actually pretty good!
