- 8 oz. firm tofu
- 2 Tbsp. low sodium soy sauce
- 2 tsp. coconut oil (divided)
- 3 Tbsp. shallots (minced)
- 3 garlic cloves (minced)
- 1 Tbsp. fresh ginger (grated)
- 1 Tbsp. lemongrass (paste, I used Gourmet Garden, or 1 Tablespoon of freshly grated lemongrass)
- 2 tsp. red chile paste (or sambal oelek, I used Gourmet Garden, use1 teaspoon for less spice or omit)
- 1/2 tsp. salt (more to taste)
- 1 cup carrots (matchstick-cut)
- 13 oz. unsweetened coconut milk (1 can)
- 1 fresh lime juice (large)
- 4 cups vegetable broth
- 6 green onions (green parts chopped)
- 2 zucchinis (medium, spiralized, or you can julienne, or cut into matchsticks)
- 1/2 tsp. crushed red pepper (more for more spice)
- freshly chopped cilantro
- mint leaves (freshly chopped)
- basil (freshly chopped)
- red chili peppers (chopped, remove the seeds for less heat)
- lime wedges
- peanuts (unsalted)
- sriracha sauce

Yummy! Nice to use things already n fridge & cupboard. Good flavor & had fresh Thai basil from garden which added a touch more color and subtle flavor as garnish. Zuke was al dente and tofu as garnish alongside broken unsalted peanuts just enhanced flavor and texture. I used all this scallion recommended and that was great, too. A keeper. Fully veg. Maybe high maintenance to reheat and keep garnishes fresh and on the side.
