- 1 lb. salmon (you can use the collars, belly and tail meat, or a salmon filet)
- 3 cups chicken stock
- 1 stalk lemon grass (trimmed and thinly sliced)
- 3 kaffir lime leaves (fresh)
- 2 1/2 Tbsp. golden brown sugar
- 1 galangal (golf ball sized piece of, or conventional ginger root, cut into 1/4-inch slices)
- 2 Tbsp. tamarind paste (chile, nam phrik pao)
- 2 cans unsweetened coconut milk (14 ounces each)
- 1/2 lb. mushrooms (shitake mushrooms, oyster mushrooms or enoki mushrooms work well)
- 2 red chiles (large Thai, sliced in half lengthwise)
- 2 1/2 Tbsp. fish sauce
- 1/4 cup fresh lime juice
- 1/2 cup cilantro leaves (plus more for garnish)

I actually added a few of my own vegetables, like chopped spinach, Edemame beans, vermicelli. And since I didn't have
one of the ingredients mentioned, I also added some Thai curry spice AND Ginger I had on hand, from a jar. I'm always experimenting LOL
But I was looking for a soup with Salmon, and this worked great.
Next time, I might also add some Shrimp.
