Very good. I used wide rice noodles and a total of 4oz(8tbsp) of red curry paste to get it pretty spicy. My partner wanted a touch less spice, so I’ll probably do 5-6tbsp next time.

I made this as a base recipe to use with existing pantry ingredients and added stir fried tofu for protein as a complete meal. Also added green beans. I really would have liked the addition of cilantro but I was out.

This was a great recipe. I modified it a bit because I did not have all the ingredients. I used Udon noodles because that was all that I had. I also added a couple beaten egges to the soup to make it a bit more silken. Finally I added a bit on cornstarch to thicken up the soup into more of a curry.

Delicious! I doubled the mushrooms and stored the mushrooms and peppers separately. One time I added corn and peas to the broth which was tasty. Works well with this Malaysian spice I have.
