- 1 pinch salt (the fish sauce later will add saltiness so you don't want to over salt)
- 3 Tbsp. extra virgin olive oil
- 2 bok choy (o kale chopped)
- 1/4 cup Thai red curry paste
- 14 oz. full fat coconut milk
- 2 cups chicken broth
- 3 Tbsp. fish sauce (or low sodium soy sauce)
- 1 tsp. honey

- 8 oz. egg noodles (I used Asian style noodles)
