- 2 tsp. curry powder
- 1 tsp. fresh ginger (finely minced)
- 2 chicken breasts (skinned, boned and sliced)
- 2 potatoes (cut into chunks)
- 2 carrots (peeled and sliced)
- 1 red bell pepper (small, seeded and sliced thin)
- 1/2 onion (small, sliced thin)

This was absolutely amazing! I added turmeric and cumin to give extra flavor but overall such a simple and delicious dish!
