Thai Coconut Chicken Red Lentil Soup

- olive oil (drizzle for the pan, about 1-2 T.)
- 1 onion (large, diced)
- 1 red bell pepper (diced)
- 3 cloves garlic (minced)
- 1 yam (large, or sweet potato peeled and chopped)
- 1 baking potato (large, peeled and chopped)
- 1 cup red lentils (A must! No substitutions unless you don't mind nasty colored soup.)
- 2 tsp. salt
- 6 cups vegetable broth (I went with 6 c.)
- 15 oz. white beans (or cans Great Northern, rinsed and drained)
- 3 Tbsp. Thai red curry paste (Here's a link to an image of the curry paste I see in the grocery store most often. I think I actually used about 4 T. Just check seasoning and add more.)
- 15 oz. coconut milk
- 28 oz. crushed tomatoes (or can of diced)
- 3 chicken breasts (large, sliced into thin bite size chunks)
- 1/8 cup sugar
- fish sauce (to taste, optional- if you don't have fish sauce just use salt to taste.)
- 1/2 cup cilantro
- lime (for garnish, optional)
- red peppers (or jalapenos sliced thin for garnish, optional)
