- 2 cups romaine lettuce
- 2 cups cabbage (any color)
- 1 cup matchstick carrots (shredded/)
- 4 radishes
- 4 sweet mini peppers
- 1/3 English cucumber
- 1 Tbsp. oil (for sautéing)
- 1 clove garlic (minced)
- 1 Tbsp. lemongrass (paste*)
- 1 tsp. ginger paste (minced/grated)
- 1/4 tsp. turmeric
- 1/4 tsp. sea salt (plus extra to taste)
- 1 tsp. sambal oelek
- 2 Tbsp. oil (I used avocado oil)
- 2 Tbsp. apple cider vinegar (or rice vinegar)
- cashews (chopped)
- shredded unsweetened coconut
- mint leaves (chopped, parsley and/or cilantro may be used too)
- lime wedges (to garnish, optional)
