- 1 cup smooth peanut butter
- 1/4 cup soy sauce
- 3 tsp. chili paste
- 2 Tbsp. brown sugar
- 2 limes (juiced)
- 1/2 cup hot water
- 1 clove garlic (minced)
- 1 tsp. rice vinegar
- 1 tsp. ground ginger
- 1/2 tsp. sesame oil
- 1/2 thin spaghetti (a pound, fully cooked and drained)
- 2 skinless chicken breast (boneless, fully cooked and sliced diagonally, I like to roast mine with olive oil, salt and pepper)
- 2 carrots (julienned)
- 1 can water chestnuts (drained)
- peanuts (handful chopped, for garnish, optional)
- 1 bunch cilantro (chopped)
