  • 1 pinch red chili flakes
  • 1/2 can unsweetened coconut milk
  • 3 1/4 cups chicken stock
  • 1/2 lime
  • 2 teaspoons lemon grass (paste)
  • 2 teaspoons fish sauce
  • 3 tablespoons pineapple juice (and reserve the chunks)
  • 2 tablespoons crunchy peanut butter
  • 1 cup egg noodles (thin dried)
  • 3 scallions (chopped)
  • 3 tablespoons cilantro (chopped)
  • 1/2 teaspoon Sriracha
  • fried onions (to garnish)
