- 1/2 white onion (or Yellow, thinly Sliced)
- 1/4 cup ginger (peeled and rough chopped)
- 1/4 cup lemongrass (rough chopped)
- 3 cloves garlic (sliced)
- 2 Tbsp. coconut oil
- 12 cups chicken stock (or broth)
- 2 tsp. fish sauce (Thai style)
- 6 lime leaves (keffir, optional but good! available at Asian markets)
- 1/4 cup galanga (sliced, optional – available at Asian markets)
- 1 1/2 lb. chicken breast (or thigh sliced into uniform ½ inch thick, bite size pieces)
- 4 oz. mushrooms (slice, optional)
- 6 oz. rice stick noodles (vermicelli, kelp noodles or angel hair pasta)
- 1/2 cup chopped cilantro
- 4 scallions (chopped)
- 1 red chili pepper (fresh, medium hot)
- 1 lime (cut into wedges)
- bean sprouts (optional, but delish)
- hot chili sauce (sriracha, sambal oelek or hot chili oil)
