- 1 fresh coriander (big handful of)
- 1 lemongrass stalk (roughly chopped)
- 2 kaffir lime leaves
- 1 galangal (little piece of fresh, peeled)
- 1 ground coriander (generous pinch of)
- 1 ground cumin (generous pinch of)
- 1 handful Thai basil (or regular basil if you can't get Thai basil)

- 2 Tbsp. peanut oil
- 1 kg boneless chicken thighs (cut into thin strips)
- 400 mL coconut milk (1 can)
- 100 mL chicken stock
- 400 grams green beans

- pepper (for seasoning)
